Course Description
Culinary Arts 1 introduces students to careers in the food service industry while building the knowledge and skills needed for success. This one-semester course explores the history and development of culinary arts, nutrition, health, safety, and sanitation, as well as the science and methods behind food preparation. Students will progress through units that cover the foundations of culinary practice: the history of the industry and world cuisines; nutrition, kitchen safety, sanitation, and public health responsibilities; food science, cooking methods, and recipe skills; stocks, sauces, soups, salads, breads, grains, and breakfast dishes; and advanced skills in preparing seafood, poultry, meats, vegetables, fruits, and baked goods. By combining theory with hands-on learning, this course prepares students to understand culinary traditions, practice essential kitchen skills, and explore potential career pathways in food service.
